Pumpkin Shell Soup

If you follow this blog, you know that I talk about food whenever possible.  I love to cook and I love to eat!  One of the great joys of owning The Pumpkin Ranch is experimenting with our crop.  This is a super simple, fun recipe that even my kids tried and thought was pretty cool.  One thing I added to this recipe is a bag of frozen, dices potatoes, thawed and heated the pumpkin puree.  I don’t own a sieve, so I used my food processor.  I just didn’t puree the pumpkin all the way to liquid.  I like texture in the soup.  I hope you get a chance to try and enjoy this recipe this fall.
